What makes the kitchen threats different from the customer-line anomalies is that two of them are consequences, not ambushes. Buno's spawn chance exists only when the coffee minigame goes badly; Flamme's only when pancakes or waffles burn. Run the kitchen cleanly and two of the three Anomaly Cafe kitchen threats mostly never happen — the better you cook, the less you fight.
Spore Fly is the exception that keeps you honest: it spawns at random, so somebody on the shift should always be ready to kill it on sight. That is one reason Pyro is the value character pick — she starts with a metal pan, one of the two documented Spore Fly weapons, and cooks 10% faster, which lowers the burn risk that feeds Flamme.
